Well, since I can't sleep ... why don't we swap recipes?

I'll start! And how fitting that my first recipe is for biscuits!



Parmesan Cheese Biscuits

These take just minutes to make and the preparation does not even
require rolling out the dough. This quick savory biscuit would
greatly complement a spicy tomato sauce.

2 cups all-purpose flour
1 tbsp. baking powder
1 tsp. salt
1/4 cup vegetable shortening or butter
3/4 cup heavy cream
1/3 cup grated Parmesan cheese

Preheat the oven to 500 degrees. In a large bowl, sift together the
flour, baking powder and salt. Cut in the shortening or butter with a
pastry cutter or 2 knives until the mixture resembles coarse meal.
Add the cream and Parmesan, and stir until just blended. Flour your
hands and pull off an egg-size piece of dough. Pat lightly to flatten
into a circle. Place the biscuits on an ungreased baking sheet 1 inch
apart. Bake for 8 to 10 minutes, until golden brown. Remove to a rack
to cool or serve immediately. Makes 12 biscuits.

Chicken Tetrazzini

8 oz dry spaghetti, cooked, drained and kept warm
1/4 cup dry breadcrumbs
3 tbsp butter or margarine, divided
3/4 cup shredded Parmesan cheese, divided
1 cup chopped onion
1/4 cup all-purpose flour
1/4 tsp salt
1/8 tsp ground white pepper
1 can (12 fl. oz.) Evaporated Milk
2 cups cooked, chopped chicken or turkey breast meat
2 cans (4 oz each) sliced mushrooms, drained
1 cup frozen peas, thawed
2 tbsp dry sherry
1 can (14.5 oz.) chicken broth

PREHEAT oven to 350ø F. Lightly grease 13 x 9-inch baking dish.
COMBINE breadcrumbs and 2 tablespoons butter in small bowl. Stir in
1/4 cup cheese.

MELT remaining butter in medium saucepan over medium heat. Add onion;
cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir
in flour, salt and pepper; cook, stirring constantly, for 1 minute.
Remove from heat; gradually stir in broth. Return to heat; bring to
boil over medium heat, stirring constantly. Stir in evaporated milk
and remaining cheese; cook over low heat until cheese melts. Remove
from heat. Stir in chicken, mushrooms, peas and sherry.

COMBINE pasta and chicken mixture in large bowl. Pour into prepared
baking dish. Sprinkle with breadcrumb topping.

BAKE for 20 to 25 minutes or until topping is lightly browned. Serve
immediately.

Oven Fried Pecan Cornmeal Chicken

Ingredients:

2 pounds chicken breast
1 cup vegetable oil
3 tablespoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 cup finely ground pecans
1/2 cup yellow cornmeal

Preparation:

Heat the oven to 400 degrees. Pour 1/2 cup of the oil into a 9x13-inch
baking dish and heat it in the hot oven for 10 minutes. Pound the
chicken breast halves to an even thickness.

Combine the remaining oil with the mustard, salt, pepper and paprika
in a shallow bowl and mix well.

Combine the pecans and cornmeal on a sheet of wax paper. Dip the
chicken pieces in the seasoned oil and then in the nut mixture.

Remove the pan from the oven and place the chicken pieces in the pan.
Bake for 10 minutes, then turn with tongs and bake for an additional
15 minutes. Drain on paper towels and serve immediately.

Here's one just for fun ... I found it in a 1928 cookbook, probably not practical for today, but nostalgic nonetheless...



Alma's Recipe For 'possum


1/2 cup Lime
1 gram Water
1 cup Salt
1 Red pepper pod
1 Possum


Put 1/2 cup lime in about 1 gallon of boiling water and scald
quickly, and pull off hair while hot. Scrape well--remove feet, tail,
and entrails--like you would a pig. Cut off ears, remove eyes and
head if desired. Pour hot water over it and clean thoroughly. Put
one cup salt in sufficient cold water to cover possum, add 1 pod red
pepper and let stand overnight. In the morning remove salt water and
pour boiling water over it. Cook in enough boiling water to boil up
over possum but not enough to cover. Cook until skin can be pierced
with a fork easily, and let stand in water until ready for baking.
When ready to bake, place possum in pan with skin side up. Bake in a
moderate oven until crisp and brown. If fire is too hot, skin will
blister and burn. Carve possum and surround with potatoes (sliced
or quartered) which have been previously baked.

Beef Stroganoff

3 lbs beef round steak 1/2 inch thick
1/2 cup flour
2 tsp salt
1/8 tsp pepper
1/2 tsp dry mustard
2 medium onions thinly sliced and separated into rings
2 cans (4 oz each) sliced mushrooms drained or 1/2 lb
mushrooms
1 can (10 1/2 oz) condensed beef broth
1/4 cup dry white wine
1 1/2 cups sour cream
1/4 cup flour, hot buttered noodles or fluffy rice
3 tablespoons fresh minced parsley

Trim all excess fat from steak and cut meat into 3-inch
strips about 1/2 inch wide. Combine 1/2 cup flour, the
salt, peper and dry mustard; toss with steak strips to
coat throughly. Place coated steak strips in Crock pot;
stir in onion rings and mushrooms. Before serving combine
sour cream with 1/4 cup flour; stir into crockpot. Serve
Stroganoff over hot buttered noodles garnished with
minced parsley.

Alfred Hitchcock's Quiche Lorraine
Tart Pastry
2 cups pastry flour
1/2 cup butter
1 egg yolk
Salt
1/4 cup cold water
Filling
2 or 3 slices cooked diced ham
2 onions, sliced
4 eggs
Dash of cayenne pepper
Light grating of nutmeg
2 cups hot milk

Tart Pastry: Work lightly together the pastry flour, butter, egg yolk,
a pinch of salt and cold water. Chill the dough for 1 hour, or until
needed.

Roll out half the dough to line the pie pan. Prick randomly with the
point of knife and crimp the edge with the tines of a fork. Save
remaining pastry for another pie.

Filling: Scatter diced ham on the crust.

Saut‚ sliced onions in butter until they are soft, but not brown;
spread over ham.

In a saucepan, beat four eggs with a good pinch of salt, cayenne and
nutmeg. Gradually add hot milk, beating continually with a wire whisk.
Continue to beat the mixture over a low fire until the custard begins
to thicken. Pour it into the tart shell and bake at 375 degrees F for
30 minutes, or until custard is set and the top is golden.
Serve hot.

Barbara Bush's BBQ Chicken

1 2 1/ 2 to 3 pound broiler-fryer chicken quartered
3 tablespoons lemon juice
1 tablespoon cooking oil
1 teaspoon salt
1 /2 teaspoon ground black pepper
1 clove garlic, minced
2 1 /2 cups water
1 cup coarsely chopped onion
1 /2 to 3 /4 cup granulated sugar
1 /2 cup butter or margarine
1 /3 cup yellow mustard
1 /4 cup cider vinegar
1 /2 teaspoon ground black pepper
2 1 /2 cups catsup
6 to 8 tablespoons lemon juice
1 /2 teaspoon ground red pepper

Place chicken in a plastic zip top bag. Set in a shallow dish. For
marinade, stir together 3 tablespoons lemon juice, cooking oil, salt 1
/2 teaspoon black pepper, and garlic. Pour over chicken. Close bag.
Marinate in the refrigerator for up to 24 hours, turning often.
In a saucepan, combine water, onion, sugar, butter, mustard, vinegar
and 1 /2 teaspoon pepper. Bring to boiling, reduce heat. Simmer,
uncovered, for 20 minutes. Stir in catsup, Worcestershire, 6 to 8
tablespoons lemon juice, and red pepper. Return to boiling; reduce
heat. Simmer, uncovered for 50 to 60 minutes or until reduced to about
4 cups.

Meanwhile, drain chicken, discarding marinade.

In a grill with a cover, arrange preheated coals around a drip pan.
Test for medium heat above the pan. Place chicken, bone side down, on
grill rack over drip pan. Cover and grill for 50 to 60 minutes or
until chicken is done. Brushing often with barbecue sauce the last 10
minutes of grilling.

To serve, pass around additional barbecue sauce with chicken.

Makes 4 servings.

Everyone who likes fish, ought to know how to fix Hush Puppies!

Hush Puppies

Ingredients:
1 1/2 cups white cornmeal
1/2 cup flour
2 tsp. baking powder
1 tsp. salt
1 small onion, finely chopped
3/4 cup milk
1 egg, beaten

Sift together dry ingredients. Add onion. Stir in milk. Drop by
spoonfuls into hot, deep fat. A few at a time. Fry until golden brown;
drain on absorbent paper. Makes 2 dozen.

Here's a yummy one for desert! You can use sugar if you like, instead of Splenda. I'm diabetic and tend to forget that some people still use sugar.



Applesauce-Spice Cake

Ingredients:
3 cups water
1 1/4 cups raisins
2 1/2 cups unsweetened applesauce
3 eggs, beaten
2 tablespoons powdered sugar substitute
1 cup vegetable oil
3 cups self-rising flour
3 tsp. ground cinnamon
1/4 tsp. baking soda
2 tablespoons vanilla extract
cooking spray

Combine 2 1/2 cups water and raisins in a heavy pan and bring to a
boil. Boil until the water evaporates or is absorbed by the raisins.
(watch carefully) Remove from heat. Add applesauce, eggs, sugar
substitute, oil, and remaining water. Stir to combine. Sift together
flour, cinnamon and soda, then gradually add to the applesauce mixture
with vanilla, stirring after each addition. Spoon batter into a 10
inch Bundt pan coated with cooking spray. Bake at 350 degrees for
40-45 minutes or until a toothpick inserted comes out clean. Cool in
pan for 10 minutes; remove from pan and cool on rack. Frost as
desired. Makes 28 slices.

29 mg Cholesterol, 165 calories, 20 gm carbo, 2 gm protein, 26 mg
sodium, 8 gm fat

Cheddar Biscuits

3 cups Bisquit Mix
3/4 cup milk
1 cup grated, sharp cheddar cheese
1/4 cup butter
1 tsp. dried parsley flakes
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning mix

Heat oven to 450ø F. Mix Bisquick, milk and cheese until a soft dough
forms. Drop by large spoonfuls onto a baking sheet. Bake 8-10 min
until golden brown. Mix butter, garlic powder and herbs. Brush mixture
over warm biscuits before removing from sheet.

CHICKEN RATATOUILLE

Served over rice, this delicious dish is loaded with vegetables and
skinless chicken breasts, making it a lower fat, lower salt one-dish
meal.

1 Tbsp vegetable oil
4 medium chicken breast halves, skinned, and fat removed, boned, and
cut into 1-inch pieces
2 zucchini, about 7 inches long, unpeeled and thinly sliced
1 small eggplant, peeled and cut into 1-inch cubes
1 medium onion, thinly sliced
1 medium green pepper, cut into 1-inch pieces
1/2 lb fresh mushrooms, sliced
1 can (16 oz) whole tomatoes, cut up
1 clove garlic, minced
1-1/2 tsp dried basil, crushed
1 Tbsp fresh parsley, minced
to taste black pepper


Heat oil in large nonstick skillet. Add chicken and saute about 3
minutes, or until lightly browned.
Add zucchini, eggplant, onion, green pepper, and mushrooms. Cook about
15 minutes, stirring occasionally.
Add tomatoes, garlic, basil, parsley, and pepper; stir and continue
cooking about 5 minutes, or until chicken is tender.
Broil 6 inches from heat, 15 minutes on each side, brushing with
marinade every 5 minutes. Discard any leftover marinade.

Yield: 4 servings--Serving Size: 1-1/2 cup

Peach Cake

Servings: 8
Comments:
A quick and easy cake to make for an every day dessert or to serve for
a festive occasion such as Canada Day. Serve with whipped cream or
vanilla ice cream.

Ingredients:

For Peach Layer:
398 mL (one 14 oz. can) sliced peaches, drained
125 mL (1/2 cup) firmly packed brown sugar
50 mL (1/4 cup) butter or margarine, melted
250 mL (1 cup) Quaker Harvest Crunch cereal Original Blend

For Cake:
325 mL (1 1/3 cups) unsifted all-purpose flour
125 mL (1/2 cup) milk
75 mL (1/3 cup) granulated sugar
50 mL (1/4 cup) vegetable oil
10 mL (2 tsp) baking powder
2 eggs
2 mL (1/2 tsp) salt
5 mL (1 tsp) vanilla extract
Instructions:

For Peach Layer:
Arrange peach slices on bottom of a greased 1.5 L (9-inch) round cake
pan. Combine butter, sugar and Harvest Crunch; sprinkle evenly over
peach slices.

For the Cake:
Preheat oven to 180 degrees C (350 degrees F). Stir together in a bowl
flour, sugar, baking powder and salt. Add milk, oil, eggs and vanilla.
Beat until smooth, about one minute. Batter will be thick. Spread
batter evenly over peach layer. Bake in preheated oven 45 to 50
minutes. Invert pan immediately onto serving plate; remove pan. Serve
warm with sweetened whipped cream if desired.

Makes 8 servings.

Beef Sirloin Strips & Snow Peas
Serves:4


Ingredients
1 lb. beef sirloin cut in bite-size" strips
1/4 cup teriyaki sauce
2 tbsp. vegetable oil
20 fresh mushrooms, chopped
1 tsp. finely chopped fresh ginger root
1 cup beef broth
1 tsp. cornstarch
1/2 lb. fresh snow pea pods

Instructions
1. Marinate meat in teriyaki sauce 15 minutes.
2. Heat oil in large skillet over high heat. Add beef and cook 1
minute on each side.
3. Add mushrooms and ginger to pan. Cook 3 minutes over high heat.
4. Pour in beef broth and cook and stir 3 minutes more. Mix cornstarch
with 2 tablespoons of water; add to skillet.
5. Cook one minute more Stir in pea pods and heat through. Serve over
hot cooked noodles.

Apple Butter Cookies

1/4 cup softened butter
1 cup packed brown sugar
1 egg
1/2 cup quick cooking oats
1/2 cup apple butter
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 Tbs milk
1/2 cup nuts, chopped
1/2 cup raisins

In a mixing bowl, cream butter and sugar. Beat in
egg, oats, and apple butter. Combine dry ingredients;
gradually add to creamed mixture along with the milk;
beat until blended. Stir in nuts and raisins. Chill
well. drop by teaspoonfuls onto a lightly greased
cookie sheet. Bake at 350 degrees for 15 minutes.

Note: Freeze baked cookies in tins or freezer bags
for the months ahead.

Kitty Litter Cake

1 Spice or German Chocolate Cake Mix
1 White Cake Mix
1 Large Package Vanilla
Instant Pudding Mix
1 Package White Sandwich Cookies
Green Food Coloring
12 Small Tootsie Rolls
1 NEW Kitty Litter Box
1 NEW Kitty Litter Box Liner
1 NEW Pooper Scooper

Prepare cake mixes
and bake according
to box directions (any size pan).

Prepare pudding,
chill until ready to assemble.
Crumble sandwich cookies
in small batches in food processor,
scraping often.

Set aside all but 1/4 cup.
To the 1/4 cup of crumbs,
add a few drops of green food coloring
and mix using fork or shake in a jar.
When cakes are cooled to room temp,
crumble into a large bowl.
Toss with half the remaining cookie crumbs
and chilled pudding.
You probably won't need all the pudding,
mix the cake and "feel" it,
you don't want it soggy, just moist;
gently combine. Line litter box.
Put mixture into box.
Put 3 unwrapped tootsie rolls
in microwave safe dish and heat
until softened. Shape ends so they
are no longer blunt, curving slightly.
Repeat with 3 more tootsie rolls
and bury in cake mixture.

Sprinkle the other half of cookie crumbs
over top. Scatter green crumbles
lightly over top (chlorphyll in cat litter).
Heat 3 tootsie rolls in microwave
until almost melted. Scrape them on
top of the cake and sprinkle with
cooke crumbs. Spread remaining
tootsie rolls over top; take one
and heat until pliable, hang over
side of litter box, sprinkle with cookie crumbs

Beer Biscuits with Honey Butter

Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
1 teaspoon kosher or coarse salt
1/4 cup vegetable shortening
1 1/2 teaspoons butter, melted
3/4 cup beer, flat and at room temperature (half of a 12-ounce can)

Honey Butter:
1/2 cup butter, softened
2 tablespoons honey - or to taste
Preheat oven to 400øF (205øC). Grease muffin tin; set aside.
In a large bowl, combine flour, baking powder, sugar and salt. Cut in
the shortening with a pastry cutter or the tips of your fingers until
mixture is crumbly like split peas; stir in the butter and beer,
mixing well.
Fill muffin cups about three-fourths full.
Bake for approximately 12 to 15 minutes or until biscuits are golden
brown. Serve warm.
For Honey Butter: Combine the butter and honey together, mixing well.
Makes 1/2 cup.
Makes about 10 biscuits. (Recipe can be doubled.)

15.2g total fat; 25.9mg cholesterol; 405.1mg sodium; 37.0mg potassium;
