It's not SET in Ireland, but the main characters are Irish...

The Boondock Saints...

Although, whether you want to watch a movie about two brothers who set out on a crusade against criminals with your mother...

Waking Ned Devine - Was that set in Ireland? If so, a good one to watch with your mom. I did.
 
Breakfast On Pluto. 70s transvetite hippies. Very very cool, and the lead is Cillian Murphy, who was Scarecrow in Batman Begins.
 
This one might be hard to find, but "The Miracle" with Niall Byrne & Beverly D'Angelo has some great shots of Ireland.

What a good son you are, watching movies with your Mom.

The Boys And Girl From County Clare.

It's obscure, but it's very lively and filled with a lot of good Irish music and hot Irish guys.
 
Number one would have to be The Commitments, one of my all time faves.

Other good movies from Roddy Doyle books are The Snapper and The Van.

The Playboys was good IIRC.

Of course The Crying Game, The Boxer, In the Name of the Father if you want to get all political. My Left Foot too.

Going back a ways, The Quiet Man of course although it's strictly Hollywood-Irish. Odd Man Out is also a terrific movie. And The Dead is great for Joyce lovers.

And In America, a lovely movie about Irish people immigrating to New York. I'll bet your mom would like it.

"Dementia 13." It was Francis Ford Coppola's directorial debut. Came out shortly after "Psycho" and is somewhat of a knockoff of its predecessor. Takes place at an Irish castle where an ax murderer is on the loose.
