Hey peeps!
My question for you all, what healthy food do you love/like. Not what is just good for you, but you salivate over the thought of eating it.
My recipe is called (named by my colleagues who tried it) the bowel-ripper or ring-burner. Oh such a smooth bunch they are hah.
1kg of chickpeas (I use canned, rinsed well)
2-3 red or brown onions
two carrots
two sticks of celery
1-2 good sized chillis of your preference (I prefer birdseye or habanero)
chicken stock
2 cloves of garlic
sour cream (reduced fat)
Sweat off the mixed veggies in some oil, then add the chickpeas and stock, simmering away until the veggies are tender and the chickpeas are cooked (takes about 30mins with canned for me, longer for dried).
blend up the mix to your desired consistancy, I like a really thick soup, one that clings to the spoon like a watery mashed potato. Swirl in some sour cream and eat with some crusty bread.
Cheap as heck (costs me $10 to make enough to feed me for 2-3 days).
One word of warning though, this contains some SERIOUS fibre, your stomach will be entertained and your bowels scared. A small bowl is enough to fill me right up and stay full for hours.
