But, cheese generally is curdled. Sour cream is not.

And usually, soft cheeses like Brie have a rind, although obviously not for cream cheese or mascarpone.

Again, as a general rule, most cheeses have salt added. I don't think sour cream ever does.

Not sure if there is any univerally recognized standard by which cheese is defined.

Generally, cheese has lower moisture content than sour cream.

I think sour cream is somewhat like yoghurt, but more fat.
And it's not the same as ordinary cream that you just left to go past its best-before date!

There’s a lady at work that will never throw her sour cream away because she says it can’t go bad it’s already sour. I picked up a container she had in the work fridge and the container actually exploded when I picked it up. We found out what the smell in the fridge was.

I like sour cream (and most cheese) less and less as the years go by. I used to like it on enchiladas and tamales but not anymore. The sour cream ruins the green salsa verde sauce which I love. I also used it on some omelettes and now it is YUCK and even on potatoes which I still like a little on a red potato with chives but not on the brown ones.
