I love watching his vids.

Of course Julia's Art of French Cooking is a cornerstone in our kitchen library....but honestly...you do sometimes have to be her to know what the fuck or why the fuck you do the next thing. Or the last thing.

This one looks pretty tasty...but I am also thinking one pot meal?

By the time we're finished we will have laid waste to the kitchen.

 
I've never heard of deep-frying eggs. But that did look good once it was completed. A lot of work, though.
 
I watched almost all of it, but his vacillating imitation and contempt of fine cooking is not my cup of tea. He made a big deal of simply fluting the mushrooms, when it is no more difficult than using a zester on a lemon. It was a bit mocking, which ill-behooves anyone making a Child recipe.

He also dumped a branch of tomatoes on the vine into the blanching pot, a silly, badly conceived, stunt, to appear unconventional. It's not even a good idea, as tomatoes get ready at differnt times based on their size, so leaving them all on the branch is silly. They could also too easily drop off in moving them to a plate, so risky.

On the other hand, translating the recipes for lazy readers is a useful premise. although just looking at his galley kitchen made me claustrophobic. In house-hunting, I will never choose one that has no windows in the kitchend and has a dead-end wall like that one does.

We did not try this recipe.

Generally though, even with Julia's recipes, I do check on-line to see if other cooks have notes.
 
I’d like to see the test kitchen try it. They’d figure out the perfect way to fry the eggs.
 
I'm not so surprised at deep-fried eggs. I suspect they are actually poached in oil instead of in water. Just a guess.
 
Below stairs is for an old house with servants who would cook downstairs and carry the meal up to the family and entertaining rooms upstairs. No one who cooked for themselves today would want a kitchen below stairs.

I would! English stately homes have the best kitchens and cooking utensils ever made.
I would like some updates - like plumbed-in hot water and electric light. But don't take away anything like the stone hearth or the slate
work surfaces!
 
Along those lines...we chose black slate for our kitchen because I was always so impressed how it wore in manor kitchens

Thank you. When I buy my next house, I may take your advice when I get my counters done. I had beautiful butterfly granite (green) in Albquerque, which I loved, but the same physical trait that causes the butterfly effect can also cause it to chip out.

What are some examples? I love great utensils and have been collecting well-made pieces for years. I'm curious what English examples there are.

Make sure that if you do use black slate that it doesn't have too many 'fat' lines running through it and that it sits on solid plywood surface below....because it can fracture.
