The usual (and reasonable, but more on the polite than the really rational side) thing is to pay in advance if the "hiree" doesn´t know the client: it´s in fact that part is always the more "exposed".
In any case, the client deserves a rip-off if he has been a fool: you hire people offering particular services, not fantasies, and it´s not that hard to inquire what kind of person you want to hire before doing it.
