Food is made of dozens of compounds, all with different physicochemical properties. Some evaporate at lower temperatures than others, which lead to the aroma characteristic of that item spreading through the air. So some of the chemicals which make up a piece of shit do volatilise and float off into the air, and that's what you smell. It's not gaseous shit that you're breathing in, just gaseous components of it.
