As of today 5/15/2024 tacos and burritos are legally sandwiches

Taco is Mexican for a sandwich. Burrito is Mexican for "this might be taco filling or not but it's all rolled up so you can see what it is, shut up and eat it".
Enchiladas are cheese or beef, etc. filled sandwiches covered with gravy.

In New Mexico, enchiladas are not rolled, but layered like tostadas.

I made New Mexico style enchiladas once. Made the sauce from scratch... from simmering and then scraping the meat out of the peppers. It turned out great.

I make tex-mex enchiladas flat. It's a pain to roll then up. That stuff it hot and it burns my widdle fingers. Layer it like lasagna. Tastes the same.
