Buffalo the other Red Meat

After work my friend and I headed to a happy hour in South East Portland, I ordered a local IPA. Searched the menu, and first ordered a lamb burger but the bartender said that item was "86ed", I get it!

So then I rescan the menu and order the buffalo stew. It's a coffee, red wine stew with buffalo, wilted spinach and jalapenos, with corn dumplings (which I didn't care for). But the buffalo stew was awesome!

I know some people will say American Bison, you hipsters! :)
 
I had a bison burger once. It tasted good and I was pretty satisfied with it overall and that I would like to try it again. That was until I came home and...
 
I do like buffalo burgers. They do have both a slightly different taste (a bit more complex, IMHO) and different texture (they're a bit "crumbly", since there's less fat in buffalo). Healthier, too. But still meat.

I've had Buffalo several times; there used to be several farms in Michigan that marketed the stuff.

It is actually very healthy meat; not lots of fat. It also has a good taste...kind of like venison (deer) meat.
 
I had a bison burger tonight with provolone cheese. It was great. Since the meat is so lean, it should not be overcooked.
 
I grew up in North Dakota. Buffalo meat is very popular there. There are numerous ranches throughout the state that only raise buffalo. The fences have to be higher and much stronger to keep them penned up. They will walk right through a tradition fence used to keep cattle in. I've had buffalo burgers, steaks, roast even taco's. It does contain less fat than beef. If cooked slow and on low heat it will retain it's moisture. It really isn't as "gamey" as some non traditional meats can be. Give it a try.

I had a buffalo steak at a restaurant once. It was delicious. Buffalo stew sounds really good.
