My absolute favorite is Think Twice. However, honorable mentions have to go to Love Can Move Mountains & the uncut,full 7 min 38 sec version of It's All Coming Back to Me Now.

Love me Back to life is also a good one. I really enjoyed the Jump Smokers Remix and the song I'm Alive!
 
'Incredible', 'Breakaway' or 'Loved me back to life', when having a more recent album in mind. Otherwise, I love many French songs of hers. She is one of my favorite singers and I love her personality as well.

 
I love all of her major hits and enjoy singing them as well. One that really takes the cake for me though would have to be Power of Love as it was after learning the song that I found out it was my parent's wedding song back in 1987 when it was a big hit for Jennifer Rush. I even sang it for them at their 25th anniversary celebration to a great reaction, even stunning the DJ we hired.

Her new song "Recovering", which was written by P!nk in memory of Celine's husband who died of cancer, has a place in my heart as my late grandfather also died of cancer 10 years ago and my late grandmother, who died a year later, was a survivor of breast cancer. A lot of her songs have a real special meaning to me.
