It happened to me one time in a hotel room in Cleveland. I was pressed up against the dresser by a massive wall of cheddar !

Fortunately, there was a box of Triscuits within reach, and I was able to snack my way to freedom.

If you buy dried soya beans, wash them and soak them overnight. Then drain the water, put into a blender or food processessor, and whizz it up into a thick smoothy. You then need a pan of water, and a muslin cloth bag.

Place the mush into the bag, seal tight by tying the end up, and then steep the soya bean puree in the pan. Bring the pan to a simmering boil, whilst pressing the bag with a ladle. If you don't water it down too much, you get a nice creamy soya milk when it has come to the boil. Don't overboil, as you tend to get some precipitation.

Strain the resultant soya milk and you can put it in the fridge and use as a milk substitute.

Alternatively, if you add the edible type of powdered gypsum, you can make the milk curdle and make tofu. To do this, you have to line a container with muslin and pour in the thickened but still unset mixture, and just let it drain well. The custard like tofu is often served with syrup and sold as "tofu fa" or flower tofu, aka tofu pudding. I'm not keen on it, but have had bowls of the stuff which is best when fresh and slightly warm.

Varying amounts of gypsum, or, concentrations of soya milk can get you different grades of tofu, from a set custard to more manageable harder tofu that can withstand rough handling.

Well...

I'm NOT SURE of the recipe...

BUT...

It is made with Tahini (since they call it Tahini Cheese) -- which I THINK comes from sesame (not sure)...

I like it BETTER than most REAL cheeses (with the exception of Wisonsin and Tillamook)... :rolleyes:

I read an article on Discover magazine about what you just said

and it basically said this

People in countries that consume large amounts of Soy and Soy products (China, Japan, South Korea, etc) have lower levels of breast cancer and other issues that countries that do not...


and they obviously don't have low sperm counts :rolleyes:


When they gathered the same data about people from those countries that lived in Western countries, they found that the levels for all the health issues (including low sperm count) were the same


Their conclusion was that there are other things on the Western diet that are really bad for you, and soy is actually not bad for you...

especially for women...
