My list is long, but it's because I didn't even know that half of these songs were remakes until I got this book a couple of years ago, that lists the most popular remakes of all time, and it shows most of these songs on there. It's actually intriguing, if you ask me.

Mandy Moore - Umbrella(although not as good as the original(use the term good loosely), it's a song you can just sit back and relax to)

The Atari's- Boys of Summer(MUCH better then the original, the faster pace and rock-style vocals makes it a very good listen)

Disturbed - Land of Confusion(the harder tone to it makes it a much better listen IMO)

Letters to Cleo - I want you to want me(10 things I hate about you soundtrack, much better then the original)

New Found Glory - Cry me a River(JT's version is like a 'boo hoo' song, while theirs is a more 'fuck you bitch' song)

Cake's remake of I Will Survive is hot as well.
