I have two that are equally great on two completely different levels. There are so many other great directors out there, but these two are consistently the first directors I mention when asked about movies.

1. Chan-wook Park
Films:
Sympathy for Lady Vengeance
Sympathy for Mr. Vengeance
"Cut" (From the Movie "Three Extremes")
Oldboy (My absolute favorite movie)
The Humanist (He Co-wrote the screenplay for this but did not direct, another incredible South Korean director/writer (Mu-yeong Lee) did this movie and inspired Chan-wooks camera techniques and shooting style)
Joint Security Area
Judgement (Short movie that makes you question the value of life. I have not been able to find a retail copy of this, just a crappy online rip)

2. Fernando Meirelles
Films:
City of Men (TV Series, not based on the characters from City of Men, but Fernando's other movie "Golden Gate: Palace 2". The lead characters were both in City of God as well)
The Constant Gardener
City of God (My absolute second favorite movie)
 
alfred hitchcock for all his films, elia kazan for my all time favorite film, east of eden 1955.
