I thought it would be fun and helpful to have a thread for healthy vegetarian and/or vegan meals.

Here is a recipe that Transpogue (sp?) has done recently:

Breakfast:
a chopped banana,
a pear, date,
almonds
top with fresh grated ginger,
carob powder
ground flax
hemp protein
splashed with hemp milk

And for inspiration, here is a video clip of Jim Morris. He is a 72 year old vegan bodybuilder

HEALTHY PROTEIN BALLS

Here is a healthy recipe for to make your own Protein Balls:


1 cup of chocolate flavor protein powder* (you can try other flavors as well)
1/2 cup of rolled oats
1. tblsp. pumpkin seeds
1. tblsp. sunflower seeds
1. tblsp. cocoa powder
1/4 cup almond butter
I ripe banana (mashed)

Put all in bowl and mash together with hands. Or put in small food processor.

chill for an hour. You can split it into 4 and make four bars,

roll in coconut (or the flax if you wish--flax will reduce sat fat, but add to overall fat--maybe choose if you need Omegas)

366 calories
14.5 g fat [1.6 sat.]
36 mg cholest.
51.6 sodium
20.6 carb
5.2 g fiber
5.9 g sugar
47.8 g protein

Chocolate Protein Balls - Much easier to manage

Scoop out with spoon and roll about 1 inch balls. Makes about 8-10 balls/ into 5 servings.

Depending upon the size of the balls (based on 10) Serving size = 2 balls.

Tapenade Pasta

Mix 3/4 cup cooked whole wheat pasta, 2 tablespoons black olive tapenade, 2 tablespoons olive oil, 3 tablespoons shredded reduced fat mozzarella cheese and 1/4 cup roasted red peppers. Microwave to warm through and melt the cheese.

This is for one dinner serving. 360 calories. It's also excellent as a cold side dish.
 
For spinach lovers

Spinach Sunflower Stir-Fry

Heat 3 cups baby spinach leaves in 1 tablespoon sunflower oil; add one medium, sectioned orange and 2 tablespoons dried cranberries.

Only 250 calories.

This is one of my favorites, It's a 5 minute meal.

I'll add one -- passed along to me awhile back from NineOfClubs...

Several beet slices sauteed and dressed with balsamic vinegar
Top with a slight sprinkling of feta cheese, a few roasted hazelnuts, and a few sprigs of mint...

And INCREDIBLE start to ANY meal!!! ..|

Here is a recipe that is really good:

Szechuan Tofu & Green Bean Stir Fry

The trick with cooking tofu is to get the extra firm tofu and cut it into small cubes. Sprinkle the tofu with a little cornstarch and brown it with a cast iron fry pan. You can keep them separate from the other part of this dish and put it in at the last minute to keep it crispy.
