What's your favorite hot weather meal?

It is forecast to be over 95 here tomorrow (36 for the rest of the planet) and I'm out of ideas.

Even though the house is air conditioned I don't function well when it is so hot.

Your suggestions will be appreciated. Winner gets to come over and eat with me.

OH--I have the day off so have time to prepare something. And I CAN cook. :D
 
Gazpacho Andaluz :)

Chinese chicken salad. Sliced watermelon. And iced tea.
 
Oh yes, Corny reminds me to buy premade Gazpacho. Right now.

Otherwise: tomato-mozzarella salad.
Dessert: ice cream or watermelon.
 
In very warm weather, I just have chilled fruit or chilled fruit salad. Nothing too difficult - lazy to make and lazy to eat.
 
Waldorf Salad or other fruit-based salad. Mild-flavoured spaghetti. And ice cream. :)
 
Vietnamese noodle salad (or Bun).

It's vermicelli rice noodles (which are served cooled), some veg and some protein, topped with nuoc cham (mostly fish sauce, lime and sugar) and crushed peanuts.

It's perfect - all the items can be prepared in advance when the day is cooler, and thrown together for dinner. (If noodles are prepared and refrigerated in advance they just need to be run under some warm water to soften up again.)

Another good cold noodle is Soba - very different from the Bun pictured above. These are buckwheat noodles, also served room temp or chilled - and they're very good for you.

Great with a bit of fish, or chicken or protein you favor.

And a last thought: Salad Nicoise - again, all items can be prepared in advance and chilled so there's no cooking during the hottest time of the day.

It's much more filling than a green salad, delicious and cooling - which I attribute to the chilled potatoes. I often have boiled and chilled new potatoes on the hottest days because of that cooling effect.

we should get married. vietnamese bun, salad nicoise and cold soba are probably 3 of my top 10 favorite meals... ;) lol
 
Panzanella - grilled bread, tomatoes, cucumbers, onions, and olive oil. Chilled, naturally. :)
