First time ever making chicken lasagna

I've never made it before, but I'll be making it again with a few adjustments. More noodles and less sauce, and I might throw in some chopped peppers next time. I had a healthy portion tonight and I still have 4 more meals.

I made a mistake and picked up oven-ready noodles. They were okay, but I wasn't impressed enough to buy them again. Still, it wasn't bad for not even using a recipe, and it was a whole lot cheaper than the frozen stuff which FreshCo doesn't sell anymore.

The extent of my culinary aptitude is fried meat and steamed vegetables. At least allow me to vicariously experience the joys of food through imagery.
 
How did you cook the chicken?

I use lean, ground chicken. It has a nice flavour and it costs more than whole chickens or chicken pieces, but I'm not paying for bones. I buy it when it goes on sale or I buy the early-morning 'reduced' packages.

I just fry it up with some sea salt, cracked pepper, and poultry seasoning.

^ It is. It's a completely different flavour than the usual beef lasagna. I also make chili with fried ground chicken. That's an experience as well.
 
I had my homemade lasagna last night also. I made it with hot italian sausage and veal. It's the receipe our Italian restaurants made when I was a kid. Along with red sauce, I layer a white sauce also. It's incredibly rich. A word about oven ready noodles. I've tried them all. Barilla is the best as they are made with eggs. Just soak them in a bowl with hot tap water for 10min. while you are getting all your other crap together. You must cover the dish with foil the first 45 min. as the steam finishes off the noodles. Remove the foil the last 15min. to brown.
 
I think the secret is in the ricotta - get the best (freshest) you can find.

I bought the store brand ('Compliments'). I've been using their various noodles for years. The directions said to cover for the first 40 minutes, but they said nothing about soaking the noodles beforehand. Maybe I'll try that next time. Thanks.

It doesn't say to soak them on the Barilla box either. I just read it somewhere and it worked great. It's better than boiling a pot full of water. One box makes a nice 13X9 dish.

It would certainly make placing the noodles in the dish. I was snapping them in two to make them fit. (I used a 9x13 dish as well.)

I made another batch tonight. Less sauce, and I soaked the noodles as recommended. (A very worthwhile tip. Thank you.) I added chopped red and green peppers this time along with the chopped mushrooms and chicken. (No onions or garlic, though, despite some people thinking that I should be drawn and quartered for committing such an atrocity.)

If I had known how easy it is to make lasagna, I would have started years ago.
