OMG, so many deliciously sumptuous deserts. The carrot cake, cheese cake and chocolate cakes especially got my mouth watering.

I searched Tumblr with all sorts of descriptions, but could not find the page where Cormac found it, only the pic.

From a critical view of the pic, it looks like a takeoff on Baked Alaska. There is a shortbread crust, a base layer (coconut perhaps), a mango layer, and then an ice cream layer before the meringue. Also, there are gratings of coconut under the meringue, suggesting the dessert was tropical themed, maybe pina colada inspired. The coloring of the crust layer does suggest it may have lemon zest.

Although it's possible the base layer or top is lemon, I'd put money on coconut below and banana atop. It is indeed an elaborate concept and execution.

Also, the photo implies it is likely a restaurant creation, as the meringue was added only to a single serving, not to the entire torte as a home preparation would likely do.
 
That all looks good, except the red velvet. Never understood that one.

Overall, I prefer the basics:

Pumpkin pie
Cherry pie
Apple pie
Blueberry pie
Chocolate cake
Lemon cake
Cherry cheesecake
 
I love the basics too, but I tip my hat to those who can pull off something new, something elaborate, and make it work. A few of the pics looked like little more than globby goo, but most showed mastery of the medium, and were quite literally picture perfect.

On that basics note, I am in the habit of sending back food badly prepared, or not maintained. Love, love, love "home baked" pies one gets at cafes and diners, but am having a hard time finding them faithfully executed nowadays, even in the South where pie ist uber alles. A local favorite diner serves them, but is really staffed by dolts in the dessert department. If it looks good, it is good in their view.

Ordered coconut cream pie a month or so ago after a great meal. It came broken with the meringue doing its level best to abandon ship. One bite and the truth was told: the crust was as soggy as an old bowl of cereal, and had obviously been either made badly or kept for days, or both. Refused.

It's interesting how many focus on the filling obsessively and ignore that pie is a pastry. If it doesn't start off with a great crust, everything built on it fails.
