Precook the potatoes and use water rather than milk. Water creates stem and makes the eggs fluffier, especially if you finish the omlette in the oven for a few minutes. Milk can toughen the eggs.
 
Sauté the potatoes a little bit first. And I wouldn't add water to this kind of omelet...
 
Interesting.

It helps to put potatoes in the microwave quick. They take so damn long to cook in the pan it's a pain

But regardless.

I've done ham, steak, cheese, potatoes, bacon, and eggs in the pan before like an omlette skillet thing.

But hot dogs..

I never have much trouble warming up frozen potatoes in the pan, but maybe the microwave is quicker. I like to use something called Potatoes O'Brien or O'Brian which has onions and peppers already in it...
 
It helps if you use a frying pan that you can put into the oven (cast iron, etc.)

That way, as long as you scramble eggs as your base you can put whatever the hell else you want in it, then bake it at 325 for 15 min or so....

I guess it's just me then. Every time I cut up a potatoe in pieces it takes forever to get nice and and crispy and golden.

I guess it's just the brand then :D

Cut up... a potato? Are we talking about the same thing? I meant the frozen hash browns that are already cut up. 15 minutes at most.

Ever cook hot dogs with BBQ sauce and ketchup and a bit of sugar? tasty! :D

Or you can make fried rice with diced hot dogs and eggs, potato salad on side. ;)

this was a staple at our house.

potatos, hot dogs, eggs, some celery, bell peppers, onions, and once it's all cooked up some american cheese left to melt over the top before serving.

That sounds great.

I love that you decided to add the celery. Nothing like crunchy food :D

Some people recommend parboiling potatoes before you sauté them. It does seem to lead to better results...

And what did Asian style turn out to be? Soy sauce? Fish sauce? Thai chilis?
 
There were 5 of us boys growing up, all 2 yrs. apart. My dad used to make this for us all the time, except no milk. He would crack the eggs right over the potatoes and hotdogs. It wasn't til I was older that I realized people thought hotdogs and eggs was strange. What can I say, I'm Italian. Also, he would make eggs and peas, excellent. I still make both frequently.

A potato omelet is one of my mothers recipes. She cubes the potatoes (french fries cut into little squares) and deep fries them. You then mix them with eggs (3 for a large potato) add some onions or peppers and seasoning. You then add all the ingredients into a lightly oiled pan, flip when one side is done. My father also sometimes adds ham. I love to eat it with white rice.
