When I was 48 I retired from my banking job and took a culinary course in NYC one of the teachers was Julia Child. I do all of teh cooking my partner is a vegetarian and using soy meat substitutes make meals for us that peple who have had dinner with us did not believe it was not real meat!

that enjoys the old Italian American restaurant dish Chicken Marsala,try this recipe from Julia and Bridget on Cooks Country. I have made this a few dozen times and always had compliments.

Dry marsala instead of sweet.Dried porcini and crimini mushrooms(with Pancetta :dead:) for deeper flavor.And finished with shallots,a spoon of tomato paste and a few knobs of butter.Are you feelin it? :drool:

Homemade rich chicken broth/stock makes a world of difference.
