Think it has to do with abhorring the many negative stigmas and stereotypes associated with the term "gay".
Like it or not, gay is still seen or thought of as feminine, sissy, someone who is submissive and likes getting fucked in the ass.
Many men have some level of insecurity when it comes the fragile male ego. Anything associated with possibly emasculating an insecure man and exposing that insecurity and harming the ego is cause for alarm. Protecting their masculinity at all costs becomes paramount, even at the expense of logic and common sense. So they often like to stick to their straight label, even if they have some level of interest in cock, because society loves to infer straight as being synonymous with masculine just as gay is synonymous with feminine.

We all know that you can be bisexual in a million ways, and it is both unhealthy and unfair to deny this bisexuality, because there is nothing wrong with it and, above all, it isn't shameful because it entails some form of same sex attraction. By telling people that they can 'call themselves whatever they want', we are contributing to allow many to perpetuate the notion that same sex attraction is something abnormal that must be denied via semantic games.

Homosexuality is not bisexuality, but their are united, up to a certain extent, by specific attraction patterns. If we inform people and remind society that bisexuality is not a transitory state from full heterosexuality to full homosexuality, we will all be able to acknowledge that same sex desire is there, and there is nothing wrong with it. it is just part of human nature for some of us.

So yes, while pressurizing some people into labelling themselves in one particular way might be counterproductive, we should remind them and ourselves that words do have the power to change public perception as we clarify their meaning, in the same way that those same words could be used in the past as moral weapons against certain minorities.

A lot of men's only exposure to homosexuality is what they see in the media. Flamboyant, hyper feminine, etc. They think that's what being gay is, and I guess they have gay desires but don't want to be that representation of a gay men and can't fathom ever being so.
