I don't understand why there is a problem for some with Israel being Jewish, and no issues with Serbia, Russia, Greece, Iran, India etc having their national religions? There are secular, atheist, and religious Jews.
Surely you can no more have an atheist Jew as you can have an atheist Christian. An atheist has no theological belief in a G_d of any sort. Once you become an atheist, you STOP being a Christian, or a Jew, or a Muslim.
Jewish people share same qualities as any other ethnic group.
You're mixing and matching the concepts of ethnicity and religion.
Israel is a secular state and Judaism is not even an official government religion. Greek constitution has a provision that declares that Christianity is their national religion, so do many Muslim countries. etc...
