When you see a 'shooting star', it is not the meteor that is burning. The meteor is travelling so fast that the air in front of it can't get out of the way and is compressed. It is the compression which heats up the air to the point where it ignites. The heat from the flames may heat up the meteor but it doesn't burn it. They can, however, heat it up to the point of expansion, causing the meteor to break up or even explode.
If the meteors or pieces of them make it to Earth, they becomes meteorites.
Ah, but that heated air can vaporize the surface of the meteor, which is why they sometimes come in different colors!

I've seen four different colors. I've also seen two that exploded, one of which actually changed color as it did, going from bright green to bright yellow.

Different chemical elements emit characteristic colors when heated. This principle is used in creating different colors in neon signs, and I believe fireworks as well.
