NO Soup...

I melted half a stick of butter and added 5 or 6 pieces of bacon that I had torn to shreds with my bare hands. (Soap! Hot water!) Cooked in the soup pot at medium heat until the bacon fat was rendered, took forever, it begins to sizzle. This puts the fat into the soup rather than slimy rubber.

Sliced two leeks into the sizzling fat and carmelized them, the sugars turn to caramel and then add the white wine, stock and potatoes. It's all simmering now, when the potatoes are done I'll add cream, ssour cream, parmesan cheese, and chopped green onions.

Needs caraway and dill.

rice does not belong in soup.
barley is acceptable, if not mandatory.
tomato belongs in sauce, not soup.
and pasta is delightful.

Not criticising rice cooked in soup, but if I wanted to eat watery rice, I would substitute with a congee.

Cooked rice added on soup; now that's talking.
