(Will you give us a recipe with fermented tofu in The Recipe Thread? Please? There's a yummy vegetable dish in a fermented tofu sauce I've eaten at a nearby noodle house, but I've never cooked with it myself.)
 
Iceberg lettuce, torn and washed, although if you're a neat freak, cutting it is ok. Drain. One or two cloves of garlic, take off the papery husk by chopping off the root end first, then crushing it gently with the flat side of your kitchen knife. Now add a little oil into your heated pan, and gently let the garlic pan fry until it goes a light golden brown, and remove and keep the garlic for use later. Add one or two cubes of fermented tofu. Crush the tofu a little until it softens, add the lettuce and then lightly pan fried with the garlic until translucent, too much and you loose the crunch and it becomes a soggy mess. The idea is to heat it up to cook it, but also allow the tofu to cover it too. Remember to season it with some salt.

There is a vegetable called ung choi (in Cantonese) which has hollow stems, this is kinda crunchy when cooked. Fermented tofu goes well with it. Here's a blog recipe from someone.

Fermented tofu is great also for braising chicken wings. Again, sizzle garlic, retain, then pan fry the chicken wings (segmented at joints into separate pieces) until they go golden brown, add several cubes of fermented tofu, add back garlic and several slices of ginger, and cover with water, keep it cooking on medium high heat until chicken is cooked, and water level reduced, season with a little salt to taste, and maybe a tablespoon also of oyster sauce. You can thicken the sauce with cornflour mix if there is a lot of cooking sauce in the pan. You can add some chopped spring onions before the cooking is over to add a little colour.

Actually it's most popular in Indonesia and South East Asia. We usually boil the leaves and serve it with ground peanut sauce, along with boiled cabbage, boiled sprouts, boiled papaya leaves, and other vegetables you like. The dish is thus named pecel (consider it an Indonesian salad). :mrgreen:
