Most studies suggest that seed oils used at home in modest quantities are safe, but there is enough concerning data that I avoid them, sticking to olive oil.
The big concern is seed oils used in fast food restaurants. Repeatedly heating the oil to high temperatures changes its composition, and definitely raises health concerns. This is especially concerning, as many restaurants use their oil many times beyond a safe level. I haven’t eaten fried foods for decades.
