I remember the first pictures of Brad Pitt on covers when he was starting to get big: they tried to blur his funny monkey features and make him appear more "classically" handsome, more 1980s waspy Nordic American male, by highlighting his blue eyes and shedding a strong lighting on three-quarter face.
Popularity, and the ad contracts that it brings along, has nothing to do with attractiveness but appeal: more classical, out-of-the-studio looks are considered boring and mostly always fail to appeal the masses... just like with clothing or movies or everything else, people will go for something less proportionate, less dull, which is a good instinctive move, but will also often fall in the same sin of dull perfection: dumb edginess.
