I don't know what in that you found that sounded "classical", but to me it sounded like so much canned "musak". The stuff that actual musicians cringe at for fear their songs will be copied.

I don't know the 'vocal' versions of any of those tracks. But the music sounds like the sort of uninspired repetitive generic stuff that takes very little time or talent to crank out using a computer DAW.

I actually collect instrumental records, but usually tail off around 1990. But that's mainly due to it being when the 7" vinyl format died rather than any sort of taste concerns.
Some of the more innovative hip-hop producers have put out instrumental versions of their albums, because their work holds up just fine without the rhymes. Dr. Octagon comes to mind.
