Share a comfort food recipe.

I love mac and cheese, there is nothing like it. My recipe: (I didn't create it)
1/3 block of Velvetta Cheese
A bag of shredded sharp cheddar cheese.
Hald and half milk.
A box of large elbow macaroni.
A bag of pre-cooked cubed ham.

I cube up the Velveeta cheese and put it in a large non- stick skillet. Add 1/2 and 1/2 along with the shredded cheese and ham. I turn on the burner and then add the macaroni. A stick of margarine is good with this. To get the proper consistency I start with maybe a cup or two of the 1/2 and 1/2 and add more if needed. I bake some biscuits while the mac and cheese cooks.
This takes no more than a half an hour and tastes great.

I put on 3 lbs and my cholesterol went up 20 points just reading the recipe.
 
Maybe the 3 lbs...but not necessarily cholesterol.
 
If I get the opportunity, I will share my Beppe's soup recipe.... which is not an insignificant amount of work...but pure comfort.

In the meantime.

I did a hearty Lentil stew with leftover roasted chicken and made some brown rice.

Follow the recipe on the bag and just added nice big chunks of carrots and and squeezed two heads of roasted garlic into it. Added crushed red pepper for heat and a 15 ounce can of no salt diced tomatoes at the end.

With my diet I allowed myself 8 ounces over half a cup of rice. Was good though.
 
I like bourbon and playing with my nuts.
 
Chocolate bourbon pecan pie. I double the bourbon and increase the pecans and chocolate chips enough for me to get two pies out of this recipe.
I am sick with Covid. Please bring me that pie. And the bottle of Bourbon.
