Made famous by Chef Auguste Escoffier for Queen Victoria's celebrations back in the day...here you go.
You need about a pound of pitted Bing or other dark cherry. Place in a saucepan with a half cup of sugar and some Kirsch and a little water. Add some orange zest and juice and simmer. Thicken with a bit of cornstarch.
Let cool. Add a half gallon of premium vanilla ice cream to a big bowl and pour Cherries Jubilee sauce on top.
Get a spoon.
