I'll start with The Killer's Mr. Brightside (Jacques Lu Cont's Thin White Duke Mix).

Better than the original, in my opinion....

My favorite improvement on a song is KMFDM's Cake Mix of Lords of Acid's "Lover." Dave Ogilvie's remix of Nine Inch Nails' "Starfuckers Inc." is a great version of an already great song.
 
^Sarah has it on one of her remix albums though, so I understand the confusion.

I totally forgot about the White Zombie/Rob Zombie remixes. Both Astro-Creep 2000 (White Zombie) and Hellbilly Deluxe (Rob Zombie) have remix versions of the albums. Blur The Technicolor (Poker From Stud To Strip Mix) is great -- it opens with Pam Grier from Coffy ("This is the end of your rotten life...") Return Of The Phantom Stranger (Tuesday Night At The Chop Shop Mix) is a good one too. Oh, and KMFDM did some great remixes of Thunder Kiss '65 previous to both of those albums.

I know this is an old thread, but I had to comment on Mariah Carey. I seriously admire her for being one of the few artists to give her dance mixes just as much attention as the original versions. She re-writes, re-arranges, and re-sings the song! She doesn't just give the remixer the song and says "Do whatever you want with it." She puts in a lot of effort into it and that's what I think sets her apart from a lot of other artists:
