Why does it vary?

Most things do.

I suppose different people need to see it different ways in order to accommodate the natural variations in human intuition. The world makes sense when we experience it in a cohesive construct. Thus, one person is certain that the Earth was created in 6 days. Another regards that same story as essentially illustrative or mythological. Each uses their version of the truth to verify the cohesion they hold in accordance with their worldview.

I am referring specifically to whether all or some portion of the Bible is literal or figurative. The truth here refers to whatever a person (found anywhere along the literal figurative continuum) regards as correct. It is relative to the individual (e.g. their version).
