Publix has the best fried chicken.

I got Diet Coke (as usual), yellow summer squash, onions, and cheddar cheese. (The last three will be cooked together.) Smoked ham from the deli for $3.99 a pound. (I suspect the distributor gave them some extra for free.) I forgot the cat food, dammit.
 
^Well, you'd better hope that kitty likes smoked ham! :D

I had a squash casserole recipe from my aunt, which had sour cream instead of cheese. It was delicious, but I lost the recipe.

I do have an eggplant casserole recipe that I got from my Mother with cheddar cheese, and no tomato sauce to be seen. I still make it sometimes, the dish reminds me of her.
 
I suppose you could call what I make casserole, but it isn't really: I just chop up the squash and onions and microwave them until they're cooked (adding salt and plenty of freshly milled black pepper halfway through), then stir in shredded cheddar.

You should share the eggplant casserole recipe in the cooking thread in Hot Topics. I could use some good ways to cook eggplant.

To get back on-topic here, I just bought the cat food I forgot yesterday.
