If anybody's wondering what to cook for dinner tonight, here's my simple recipe for a kick-ass jambalaya.

All you need is...

>> A 1-pound package of ground beef, the 90/10 kind (90% lean - it produces a much better quality finished product.)
>> A 1-pound package of smoked sausage (beef preferable, but any kind will do)
>> An 8oz. box of Zatarain's Jambalaya Mix
>> Some Tony Chachere's seasoning (the original kind)

>> Either slice or dice your smoked sausage to your own personal liking. I split each link in two down the middle, then repeat, then dice mine into chunks. Set it aside for right this minute. We'll be back to it in a moment.

>> Take a medium to large pot. Fill just the bottom with water until it just reaches the bottom of the sides of the pan. Caution - If you need to, you can always add more later, but you can't take away!

>> While that pot is over medium-high heat, season it to your liking with the Tony Chachere's.

>> Add your ground beef. Make sure you grind up all the way through, so that it's the consistancy of taco meat.

>> Throw in your diced or sliced smoked sausage, and the Zatarain's. Stir thoroughly.

>> Cover the pot and let it cook over continued medium heat for 9 minutes. Voila! Dinner is served.

It's what I'm eating, right now.
