Because computers do everything 0's and 1's. Letters are represented by combinations of 0's and 1's.
00 = 0
01 = 1
10 = 2
11 = 3
100 = 4
101 = 5 and so on.

lower case 'a' = 01100001, 'b' = 01100010 One letter - one byte.
Don't even think about hex.
