It's been years since I had canned peas,, but I do recall them being a bit mushy at the best of times. The thing I really vividly recall was they just were never any good--frozen was so much better. My mother used frozen only, but I do remember my grandmother using canned, at least at the end of her life.I consider all canned peas mushy but maybe I'm wrong?

I ate at a diner on the way back from Atlanta Wednesday, and had a fried chicken breast, stewed cabbage, and English peas. When the waitress named peas as a side, I thought field peas since it was a small Southern town. The peas were canned, and edible, and I ate them, but felt disappointed. I only buy frozen sweet peas at home./\ I could only use frozen for that. Add them raw and still frozen to speed up the chilling process.
I could easily toss my cookies thinking about tinned peas. I knew women who put them in gelatin and cut it into squares like it was something fancy. Yuck!
