Attention What are you having for dinner?

Another round of Spanish rice, with some add ins. The only difference was that I went with Knorr brand, since it was a few cents cheaper.
 
It was OK-ish, but it did remind me that eggplant is something I will eat, but it's not anything I have huge love for.
I used to do very thin slices of eggplant(vertical) on a commercial slicer at one restaurant. We would dip the slices in a batter. Flour eggs,milk,Parmesan cheese and enough sugar to give it sweetness.

Shallow fried and drained on paper towels. Nice and crisp. No mush no goosh. Really good.
From there we did eggplant rollatini or parmesan of course.

We also would take chilled slices and roll them up with a good quality black pepper ham. Cut them into pinwheels and put them on top of our cold antipastos. Dressed with oil and vinegar and with the rest of the salami and sharp provolone cheese and cherry peppers was delicious.
 
Fried Chicken from the grocery store deli counter. Have not had it in a long time. Price is still good. Size is still good. Nice and moist.

The only thing missing is it USED to have flavor!
Ain't that the truth. I remember a favorite grocer where the chicken looked great in the deli, but tasted like flour fried in grease, sorely lacking in seasoning.
 
I ordered a cheesesteak sandwich from a local restaurant, but it looked Nothing like this:


I love a good Philly Cheesesteak - but the best place to get them is now up to $15 for just the sandwich - and the sandwich is great but their fries and onion rings taste like they are out of the freezer section at Target!
 
Tonight gave me a break from Spanish rice.

Instead, I had Knorr Taco Rice, with some beans and corn added.

Only a few more days...and the grocery budget resets for another month...
 
I remember some ^^of the Knorr products being pretty good. I would use the gravy mixes once in a while to extend/add to my homemade gravy at Thanksgiving or whatever.

I have this case of super fine egg noodles that I purchased and wasn't using them.

Last night I made a quick sauce and noodles. And ate a big salad.

I love the Knorr Mushroom Rice -

But it does not seem like taco rice and Spanish rice would be very different...

It's hard to say, since I varied what I did each night, so the end result would have potentially been different even with the same Knorr product.. But I'm guessing the differences are minor.
 
Spanish rice. Again. With a piece of clearance shelf crumb cake. Admittedly, not the best possible meal...

At least, the budget numbers now look OK for survival to May. But I'm honestly wondering what summer will be like. Summer tends to be the worst for my budget, given all the seasonal fruits I like...

Well if you are having dinner with the Seasonal Fruits let him treat sometimes! :LOL:
 
I had a bowl of baby lima butterbeans with a few pieces of onion thrown in, and cooked in the ham juice I saved from baking a picnic on Easter.
 
Around 5pm I had some fresh strawberries and a scoop of cottage cheese.

And just now I had a cheeseburger with bacon, a big pile of fries and a chocolate shake.

I ate the whole thing.:(

Last night was vegetarian black bean chili. A nice break from rice, rice, and more rice. A theme that could well come back tonight.
