Attention What are you having for dinner?

We are having what I've had every Christmas eve except when I was studying in Rome.

I am about to make the chicken and dressing for tomorrow, and probably the cranberry relish as well. I usually make stuffing, but feeling a bit sentimenttal this year, so will make the Southern version instead.

Fortunately, I have leftover corbread in the freezer and already boned a rottisserie chicken before I mowed up leaves just now. I put the skin and bones in a stock pot to make broth instead of thawing some from the freezer.

I will bake a pie and a cake tomorrow, and probably make a gumbo. Rain is due for three days this weekend, and I will hold up with fine fare.

For dinner tonight, I think I'm going to make a green chili and beef and refritos burrito.

Joy, joy.
 
Traditional Christmas lunch. Roast turkey, sage and onion stuffing, sausage meat and chestnut stuffing, pigs in blankets, Brussels sprouts sauteed in butter with smoked bacon and chestnuts, red cabbage with apple, cranberry sauce, roast potatoes, gravy. Followed by Christmas pudding with brandy cream. All prepared by yours truly. Oh, and washed down with a nice bottle of Bordeaux.
 
I made a huge turkey club sandwich on garlic naan.

Leftover turkey breast from yesterday.

Healthy bacon strips.

Nice tomato and red leaf.

Hellmann's mayo salt & pepper.

Dessert menu leftovers:

Pumpkin pie
Key Lime pie
Banana layer cake with cream cheese frosting.
Coconut chocolate chip cookies.

Back on my seafood diet.
 
Today was making a meat sauce with sweet sausages, veal parm, turkey parm and spaghetti. I also made chicken soup. Cooking for my sisters with leftovers.
 
I had the last of the chicken and dressing for brunch. Very satisfying.

Am catering dinner to my neighbors on the corner. Peeled four pounds of large shrimp this morning, made stock from the shells, and chopped okra, onions, bell peppers, and celery for the gumbo.

Made egg nog cupcakes and chai cupcakes, both with streusel toppings, and will get up from my break soon and make the cream cheese frosting with lemon grass & ginger. After that, I will cook the sausage and chicken for the gumbo in late afternoon to have it all together to take to Jorge & Moriah.
 
I finished everything and have 90 minutes to rest before adding the seafood to the gumbo. Even had time to make pot de creme and chill it. I opted for buttercream frostting for the cupcakes, but still added the lemongrass ginger tea mix. I can taste the ginger faintly, but not sure the lemongrass comes through. But, I promised dessert choices, and they have choices.

Gonna make Italian garlic toast for the gumbo. It's the perfect weather for it.

Oh, and there was a power outage at noon that lasted almost an hour. Stayed calm. :D
 
I hit the jackpot today on the produce reduction table at my locally owned market!
-three small zucchini for $ 0.79
-bag of baby carrots for $0.99
-container of diced yellow onion for $0.99

I brought them home and made zucchini with potatoes and carrots.
I added a container of vegetable stock and a potato that I had at home.
It made a nice, filling, hot veggie stew!
I had a bowl of it, sprinkled with grated Pecorino Romano cheese.
And I had enough left over to fill a container for the freezer!
Win-win all around! :D
 
Likely leftovers of veg and potato and maybe some ham that we were supposed to have yesterday.
 
I made a big pot of spaghetti with hot sausage, mushrooms, green peppers and onion with garlic bread and a salad.

And considering how much I made I suspect I will be having the same for the next couple of nights!
