Attention What are you having for dinner?

Trying to eat a little more healthy.

I just had a burger off the grill outside with lettuce and sliced tomatoes and Swiss cheese.


And I had leftover beets that I roasted and turned into a pickled beet salad with some red onion.

Longing for a strong coffee but don't feel like making it at the moment.

A few chocolate dipped cannoli would be nice as well. :LOL:

Nephew was in hospital for 4 days. He is getting better at home now on heavy antibiotics.

My nephews and nieces seem to all get sick around this time yearly. I don't remember the last time I was very sick with all that congestion. Weird.

I'm probably going to get a pizza in a while. Don't feel like cooking anything.

Glad to hear he is on the mend - but wow - 4 days is a long stay in the hospital these days - they try and push people out ASAP - so he must have been very sick.
 
I'm tempted to cook a turkey. But I don't know how well it freezes in vacuum bags. And it's just me here now. I froze some in a zip-lock bag several years ago and it was a watery mess when thawed.

I do have some turkey vac sealed. It was on the menu but someone suddenly died so it's still in the freezer. I should thaw it to answer my question.
 
Funny how the leftover turkey often tastes better than it did the first time.

The thought of turkey reminds me of one of my favorite turkey cooking videos, from someone like me who is apparently not a fan. Here is the short version, which has a moment that always amuses me towards the start. There is talk later on about turkey never being very good. There is a longer version of the video, which gives more turkey preparation directions for those inclined to try.

Thankgiving turkey dinner redux is a favourite.

Our organically and locally raised turkey is prepared according to Turkey 101 by Martha Stuart...and is incredibly delicious and moist.

The pound of butter and bottle of a good white wine makes a world of difference as well as the herbs used to perfume it.

Too bad Aunt Mary never learned how to cook one properly.

We have the makings of 2 turkey pies on the go...so more good eating to come.

Me personally I would do individual meals and freeze them. Some turkey and dressing,some sweet potatoes and a vegetable of choice. Don't forget the gravy. Freezes well and nights you don't feel like cooking in the microwave it goes.

Watery mess turkey would probably still be fine in soups and chili and croquettes etcetera...

But if you don't feel like it. Fuck it. :LOL:
 
Had a sensible dinner of broiled salmon with sauteed baby spinach and a roasted sweet potato.

While I was watching QVC's Gourmet Holiday :oops:

I ordered crumb cake with lemon curd filling.

Kill me now.

She seemed competent in the full video. But I have to admit it's hard for me to judge, because I don't know much about roasting a turkey. I have very little experience--mostly only assisting others, and that was 20-plus years ago now.

I'd agree with her that I've never had a great turkey, but in my case it could come down how all the turkey I had in the past was prepared. I also at one time wondered if I'd like a better turkey--I recall being interested in the idea of organic at one point (until I saw the price) and then later the idea of locally raised heirloom breed turkey (although the price definitely would be painfully expensive).

They are. I eat them most of the time just plain. Love when the roasting gives them a bit of color on the inside flesh. So concentrated and sweet.

Last week I guess I had a foolish dinner that was 2 cheese burgers all the way(cheese onions pickles and chili sauce) French fries with a kinda spicy cajun gravy. And a huge chocolate milk shake. I now wear a heart monitor.

I can understand that - the idea of 2 cheese burgers, fries and a chocolate shake makes my heart beat faster as well!
