Attention What are you having for dinner?

Left over kapusta
I DuckDuckGo searched kapusta, and found out that it is a dish with cabbage. Better be careful announcing you are having this. Vannie might drop in unannounced for dinner!

Always better the second day
As I get older and lazier, I feel there is a lot to be said for the convenience of leftovers. And it's definitely a big bonus when those leftovers are better the second day!

I crocked a pork roast overnight and it had been marinated in Hatch (red) chili. I added some onion and rosemary, S&P, and it was perfect this morning. Put back some in the freezer, but had two sandwiches for supper tonight after getting in from yardwork and helping a neighbor trim a door jamb with my table saw at his house.

:p

My Mom would make it and put it on top of egg noodles. Was good.

I have reached the point where I make multiple dinners most of the time when I cook (no including the grill).

I just cooked up 4 pounds of hot sausage which I will now freeze to make spaghetti with over the coming months.

When I make a meatloaf I always make 2 and freeze one.

When I make soup I make enough to give me at least 4 dinners.

That saves on time and dishes and most importantly if I have food ready to eat in the freezer it makes it harder to justify going out!

I have always done that in general. Originally, it was both for economy and time, but as I age, it is for convenience in that I don't always feel like cooking after work, or just not feeling well some days, so it is extra nice to have a good homemade anything with just reheating effort.

Chili. I was ambitious enough to cook beans from scratch, but lazy enough to use a package of chili seasoning mix.

After 8pm and all I had was a lousy Fiber 1 bar.

How many of those are a dinner portion?
