What is your favorite spice?

I like a variety of spices; dill, thyme, oregano, lovage, paprika, etc... those are what I tend to add to a lot of food. My most favourite is dill, thyme is nice on beef dishes... paprika has a nice flavour when you use enough of it, but unfortunately it's so weak.
I can't stand cumin at all. Curry is nice in small doses, in certain foods.

Am I the only one who thinks ginger has a slight pee scent in certain dishes?(Are you listening Telly? :help: Some dishes I don't get it,and I do love ginger though.Garlic,dill and fresh ground cloves are also wonderful.

I certainly dont sense "pee" aroma when I eat steamed ginger (sushi side dish) maybe it has to do with how we perceive aroma, because each person smell/taste different. I used to hate cilantro from my country because it's sooo pungent and almost smell like dead cockroach :dead: However, surprisingly..American cilantro is just pleasant.
I know dill but not that familiar unless I get them accidentally in my burger or chips or fish..
 
Your list is pretty perfect to my mind. But on the west side I would add basil, dill and fennell, and a few more on the eastern side - cardamom, cumin, fenugreek.
Hmm..they're from eastern but tbh Im not familiar with them. I think they're more popular with Indian cuisine, especially cardamom

I remember I often accidentally bite them since they mix them with regular basmati rice. The taste is not that bad but it just too much dont you think?:(
I use a decent amount of mace/nutmeg and turmeric but I can live without those.

Oh nutmeg, how can I forget #-o

In savory section- western cilantro actually isn't that bad, it's not that opposite with coriander- although I think coriander is quite friendly to human taste bud. Sometimes a hint of cilantro actually help freshen the dish

It's a tie between: vanilla, cinnamon and ginger. Throw cloves into the mix as well. I bake a lot of sweets.

It seems those are what people usually like too 'here..plus "cumin" :)
 
There is a Finnish cardamom bread, usually made at Christmas time. It's a sweet, yeast bread made into a braid and is wonderful.

Yep, people use cardamom for dessert/sweet dish as well, I also often bite a pungent cardamom inside rice pudding at Indian restaurant- (they often throw cardamom bomb everywhere). But Finnish too? Known cardamom? I bet the spice is not native/local grow..must be imported hmm..

Yes, imported as are many spices. The Indian restaurant I like puts cardamom in their lentil soup. Yummy stuff a real comfort food.
 
Ok..I forget to add nutmeg and coriander to my like-list. A must for meat cooking..

and from some list here..just realize Im not familiar with allspice, fennel, marjoram, and this one weird-named spice I found from grocery the other day "Aragorn" or something..
Sage too...idk what is that for.

For the east spice, I had some that you might find exotic (y'all spice lovers) but I recommend try these with its original dish first:

Candle Nut- if you love savory you gotta try this:

the taste even more friendly when it's raw- almost like coriander. Id think you gotta worry with its mild taste, even for first time.

Temukunci (Boesenbergia rotunda)
that one put on caution. My mom used to make plain spinach soup with that, it's quite pungent, it might overpowering the entire dish.
 
Asam kandis (Garcinia xanthochymus)
If you love tamarind- you gotta try asam kandis. Usually I found at padang-dish. The taste and fragrance is just ..spectacular imo. ..|

Keluwek (Pangium edule)

This one is kinda cool..it might turn your dish to "black" color
famous for its usage in "rawon" recipe- Javanese beef stew

The taste is surprisingly mild, a bit fragrant.
