I like a variety of spices; dill, thyme, oregano, lovage, paprika, etc... those are what I tend to add to a lot of food. My most favourite is dill, thyme is nice on beef dishes... paprika has a nice flavour when you use enough of it, but unfortunately it's so weak.
I can't stand cumin at all. Curry is nice in small doses, in certain foods.

Some dishes I don't get it,and I do love ginger though.Garlic,dill and fresh ground cloves are also wonderful.
However, surprisingly..American cilantro is just pleasant.
