What food just makes you happy when you eat it. My favorite comfort food is a simple sloppy joe. If I've had a bad day a sloppy joe will cheer me right up!

Chicken and dumplings to comfort on a cold winter night.

Both Sloppy Joes and Chicken and Dumplings sounds scrumptious on a cold winter night!

I love spaghetti squash, baked in the oven, and fixed with extra virgin olive oil, salt, pepper, and a little grated Pecorino Romano cheese on it.

roasted chicken, sweet potatoes, cornbread stuffing

Vegetable/Turkey chili or sancocho. I could go for either one right now.

In cold weather I make a lot of Chile, Cream of chicken soup with noodles, Swedish Meatballs and Pork roast cooked in a slow cooker with 2 nights of hash and gravy to follow as left overs. I make biscuits with all of these except the Chile.
My favorite out of these is the chicken soup.

This, and it is only homemade. I don't like it at restaurants.

I wouldn't say it makes me happy exactly, but it centers me. I know who I am when I eat chicken and dumplings. To that end, I always have frozen several one-gallon bags of chicken stock I have put back. It makes it easy to make the dish with less preparation.

My famous roasted chicken, baked mac and cheese and for dessert - chocolate mousse or cream cheese pie.

Marinated or Fried Calamari ....Scallops.....Grilled Chicken w/Spicy Avocado Sauce from El Pollo Loco

depending on the time of the day it would be a cup of coffee with some cookies, muffins or anything to dip in; or a Spanish omelette
