Although I'm quite partial to lobster and crab, and love Porterhouses, I have to admit to my genes: I'm probably more attracted to fried chicken than any other meat. I eat everything in meat, but don't prefer duck or lamb, but do eat them, but I love fried chicken.

And not just anyone can make it right. It shouldn't be greasy at all. And there shouldn't be egg in the batter, as it makes it hard as a rock. It should have generous black pepper in the dredge, and if the stars all align, it should be cut up right.

Stuffed chicken breast

Endless ways to prepare this dish. Chicken breast is so easy to overcook though. It is better to prepare this meat over low-medium heat and once the meat is close to room temperature so it cooks evenly, which also makes sure the stuffing reaches proper temperature without killing the chicken. White meat chicken is pretty flavorless and can be dry if it is a big chicken so it helps to brine it for an hour at least.

About time to go get us some burgers at McDonald's now. That vid made us hungry. Shall we get fries with that? Yes I think we shall, and sodas.
 
Chicken. Braised, baked, sauteed, steamed, and even fried.

THEN...it gets into things like ribeye steak (cooked Medium), etc.

As an ingredient in things, lamb is probably my favorite. Why are American menus virtually devoid of any trace of lamb?

In the past year or thereabouts, I've found that a particular restaurant in east-central Wisconsin has the best lake perch, the best walleye, and the best fried chicken that I have ever had in my lifetime!!! (And the two other people I was there with...the woman said it was the best cod she had ever had, as well.)

I wish that place wasn't 350 miles from here.
 
I also love sun perch, or bluegill. Very, very fine eating.
