Why don't we eat vegetables for breakfast?

On my journey tew becoming health conscious,
I realized that Americans neglect the healthiest food group
during the "most important meal of the day".
Instead we eat greasy bacon and sausage with sugar infested cereal.
Does anybody incorporate vegetables in their breakfast?
I think am gonna try steamed baby spinach with my eggs tomorrow.

yep .. quite often i eat some raw bell pepper or some bread with tomato on it.

the bell pepper or a cucumber is a nice snack at work, too :)

or try some raw kohlrabi .. :)
 
Sometimes eggs, turkey sausage and toast doesn't work for me.

So I do a curry tofu scramble, with sweet onions and mushrooms.

It's vegetables.

I love eggs, and eat them often. And I think they are good for you.

But the doctor wants lower cholesterol....
 
good yellow or red bell pepper doesn't need to be seasoned at all.
 
I particularly like the veggie scramble at a restaurant in KC. Lots of different stir-fried vegetables in a light garlic sauce with scrambled eggs. Good a virtuous as well.
 
Steel-cut oatmeal or gluten free cereal for me. Can't remember the last time I had a greasy bacon and sausage breakfest - kind of gross and makes me feel sluggish.
 
I think vegetables are overrated. The most neglected marconutrient is fat. Saturated fats, from meat, eggs and coconut is just as healthy and important as vegetables.

My daily breakfast = scrambled eggs with butter and cream and 2 tablespoons of coconut oil. If I have time, I will include either chicken bacon fried in coconut oil or steamed potato with cheese.

And yes, I managed to make this post without any sort of pain in my left chest or arm.

But seriously, iceberg lettuce is served for breakfast in Japan. The only popular breakfast item here that I can think of is the Denver Omelet (peppers, onions and tomatoes). Might be a little arcane, but there are Eggs Sardou (poached eggs served over artichoke hearts and covered with Hollandaise sauce.) Yum!
 
I eat ground corn for breakfast on occasion. We called them grits around here.
