Anyone else a fan of cheese pizza?

I use to love it as a kid. Just had one again after about 20 years, because it is all the store had and it was still pretty good.


As a kid the pizza place my family used used a seed type thing on their cheese pizza. Not sure what they were, but if I could find a store brand with them I would start buying that brand.


I wonder what kind of cheese makes the best pizza?

I like cheese pizza just fine, though I prefer it to have some ingredients on it like pepperoni and mushroom, etc. If it's just cheese, I like at least a decent helping of it.

Most plain cheese pizza's from your favorite pizza place are a 50/50 mix of whole milk mozzarella and low moisture part skim mozzarella. Low moisture will help brown a bit more near the crust and is a little saltier.

Not sure what those seeds were. A margherita pizza around NY/NJ is plain mozzarella.

You really won't like my favorite pizza then. Chicken and bacon with a white sauce. They are the best. Red sauce gives me too much chest pain anymore.

As long as it is white cheese. It taste better to me than any yellow these days.

That's fine. I should stop being such an elitist about it..I hate when people tell me what I should put on my bagel. It's just that once you stray too far from red sauce and cheese, it becomes less of a pizza and more of an open panini or quesadilla or something.

A cheese pizza is good I may like it with sausage or mushrooms on it
 
No cheese on it's own is too dull, i prefer mature cheddar on mine.
 
One of the best pizzas I have ever had was with goat cheese. I am glad I tried it.

you want to give an Italian a heart attack--that isn't pizza its some kind of culinary concoction---anymore than certain "Chinese " food is real Chinese food.

Unfortunately I have only had American versions of foods.
 
Yes and no! Yes to regular, deep dish, stuffed, stuffed crust and detroit style but NOT Neapolitan style I'm sorry that type of pizza is too soggy and limp in the middle!
 
Italians are very flexible when it comes to toppings on pizza as I learned while living in Rome ...and it also seems each region has their own style and favourite toppings.

White pizza was pretty common, one restaurant made a potato topped pizza that I loved to snack on while walking home from class.

Mozzarella is the standard topping cheese because of the way it melts, but we also often add some Parmesan or Pecorino or other soft cheeses as well.

And as you note even goat cheese can be delicious.
 
I'm not sure if in all my years I've ever had just cheese on my pizza...always at least one other topping, like pepperoni/sausage and/or peppers, onions.

I usually make my own loaded pizza with mozzarella, tomato sauce with basil, italian sausage (or pepperoni), onion, and green pepper or banana peppers (or pepperoncini peppers) . Usually will grate some pecorino romano on it as well. Asiago cheese is pretty good on pizza too. The more cheese the better! I've tried a few white sauce pizzas and a Buffalo chicken wing style pizza, but really didn't find them to satisfy my pizza craving as much as a red sauce ones, although they were good.
