i luv chocolate cake. not a fan of coconut though. But white choc and coconut...yeah babeah

Ya know, I'm one of the few people who is allergic to chocolate; but LOVE coconut.........go figure.

If you want to see someone get violently ill from just eating something, feed me that cake and I will up-chuck my stomach contents (TMI! lol)

Sorry for the poor visual, you certainly did/do not deserve that now.......

However, 99.99% of the people in the world will love your beautiful cake though......(*8*):kiss:

I love coconut.

Here you go ....

My Mum's Choccy Cake

1 cup self-raising flour
2 heaped tablespoons cocoa
1 cup sugar
3 good tablespoons butter or margarine
half a cup milk
2 eggs
half a teaspoon vanilla essence

Pre-heat oven to 180C (375F). Grease a loaf tin with some butter and line bottom with baking paper. Sift flour and cocoa together into a bowl. Stir in sugar. Melt butter in small bowl (microwave on high for about 25 secs), break eggs into another small bowl and lightly whisk. Stir melted butter, eggs and milk into flour/cocoa/sugar, add vanilla and mix till combined. Beat with electric beater for a few mins till mixture is smooth then pour it into the loaf tin. Bake for about 40 mins. Test after 35.

Ice with chocolate icing and sprinkle chopped nuts or dessicated coconut over the top.

The only way that could be improved is with a scoop of fresh homemade vanilla ice cream on the side.
 
The coconut is a nice touch.

So, how big are your cups? I don't like it when recipes call for a 'cup' of something, nobody has ever been able to give me a definite answer of how much is in a cup.

go to walmart n get a set of measuring cup n a set of measuring spoon. use that for ur recipes. its less than 5 bucks. but lasts forever. just like mcDonalds hamburger. only better.
