I guess the main point is that our sexuality is more fluid than we think.

But I know the whole concept of sexual orientation being a "Choice" plays into the hands of those fundamentalists who think people can be "cured" of being Gay.

Anyway – I do know my own experience – but I don’t say that being Bi-sexual wasn’t what I was all the time – maybe just that I didn’t know it.

I do think that for some bi-sexual people – including me – only a polysexual relationship can work. The fact that the sexual part of this is totally awesome for us is just a plus point against the fact that most other people don’t find this socially acceptable.

So it’s not at all easy to be “out” as both bi-sexual and in a poly relationship – not a problem for me as I was never “out” as being gay – but for my partners - even in the GLBT community - our type of relationship is not socially acceptable.

I would tend to agree that people can be anything they want to

It may not be as simple as that.

There have been people who reported shifts in sexual interests throughout their lifetime. The most common of these in my own readings have been men who believed they were (exclusively) gay only to realized later in their middle or elderly-ages that they have been bisexual all along. (In fact, a few even say they were attracted to men "then" but are "more attracted to women" now!).

However, to say that anyone can possible do this if they set their mind to it is in the same boat as saying that you could be tall at a specific height if you set your mind to it. Surely, the knowledge of what good/bad foods to eat may merely benefit/stunt one's growth, but he/she can't become 6'9 merely through desire.

Now, I'm no expert in the field of biological science or sexual orientation. My best explanation to this phenomenon is, if anything, the shifts in sexual orientation in these specific men might be (indirectly) bioligcally fixed in them (and them alone): they, under certain circumstances or at a point in life, were meant to become bi due to that genetic/hormonal/biological predisposition. On the other hand, those other men who don't have that imprinted into their genes/biology will not become attracted to women what, how or whensoever. I don't know if I can necessarily back this up with proof, but it does currently seem to me the most logically plausible.
 
I was not saying that they choose and set their mind to be one or the other, but their mind simply changes for no apparent reason.

It is the same reason that love often ends for no reason - someones opinion changes without their control, the same thing can happen for sexual preference. I'm not saying they literally say "I want to be gay/I want to be bi" then going about their business.

Well it didn't happen all at once. I will give details but try to be as succint as possible since I could easily fill a few pages.
