Cup of tea anyone?

Every morning it's a cup of Stash brand Earl Grey with double bergamot.

Tea-making, Aussie style - "Swinging the Billycan"

When you're camping out in the Australian bush, or travelling around experiencing the wonders of this wide brown land of ours, there's nothing better than a hot mug of authentic Aussie billy tea to start and end your day with. Here's how to make it .....

What you need

* Tea (preferably Australian grown)
* Sugar as needed
* Milk as needed
* Water
* Billy Can - make your own or buy one
* Forked stick
* Coals from the campfire
* Gum leaves from a nearby gum tree


What you do

Fill a billycan with water, drag some coals out of the campfire and put the billy on. When boiling, throw in a fistful or two of tea leaves and a few gum leaves from any nearby gum tree. Leave on heat for another minute then pull away from coals using the forked stick on the handle to lift.

Now comes the tricky bit ......

Grab billy handle with rag or other suitable insulator and swing quickly around in a full circle three times bringing it back up past your knee then back over your shoulder and so completing a full circle each time. The reason for doing this is to sink the tea leaves to the bottom of the pot so you can pour a drink without filling the cup with tea leaves.

However if you just tap the side of the billycan sharply with a stick a few times then let it sit for a minute or two you'll still be able to pour a good cuppa without risking life and limb (but it doesn't look anywhere near as impressive!). You could also use a tea strainer, but that is SO not Aussie bushman style!

Finally .... pour tea carefully into mugs (preferably tin mugs), add milk and sugar to taste and enjoy!!

A friend brought me a darjeeling/assam blend from India. Otherwise I'll drink Twinings English Breakfast with half and half and sugar.

Umm...I call it tea. LOL!

I have about 8 different varieties in the house, not counting the herbal tisanes, all ranging from green to white to black. My fave is Earl Grey Green by Twinings.

This thread reminds me though, I need to put in an order for some more loose tea.
 
I make my own with herbs from my garden: anise hysop, lemon verbana, lemon balm, bee balm, and sometimes sage if I have a hangover.

Speaking of which, since I have a bumper crop this year, I'm making schnapps!

I soak a big handful of leaves of whatever (anise hysop and lemon balm seem best, although bee balm is aging nicely!) with cheapo vodka in a mason jar, shaking occasionally for a couple of days, then filter through surgical gauze (yea, gross, but it's new and comes from my brother's wife who is a nurse; I'm cheap!). You can turn them into liquers by adding syrup water. Lemon balm treated this way tastes just like honey. . . .
 
I have so many kinds of tea in my house, I've lost count... plain Lipton's, Twining's Earl Grey and Darjeeling, Bigelow's Constant Comment and Plantation Mint, Celestial Seasonings' Tension Tamer and Sleepytime Plus. But I seldom drink tea at home; yesterday afternoon the Grandmother and I sat down with a half-pot of Earl Grey to gather our energies before tackling a small gardening project, and we brew up some oolong if we're having Chinese food; the herb teas are for when I'm sick or fretted.

I've taken to the habit of drinking green tea at work instead of coffee, it gives me a little lift without the jitters or the letdown. I've been using Good Earth Jasmine Green Tea, but I recently discovered Tazo Zen, which combines a tasty herbs like lemon verbena and spearmint with the green tea, a taste sensation!

And like my coffee, I don't pollute my tea with foreign substances.
 
I have all kinds. But the 'family' preference is PG Tips, or Sainsbury's red label... we have to bribe our friends to bring it to the US for us. There is a place we buy it online....

Its gotta be Twinings Breakfast for me...or later in the day Lipton's Brisk. I take it clear..no cream or sugar..I take iced tea with lemon and no sugar.
I never really got onto coffee..I do like the occasional cup every so often though!
 
A nice cup of green tea woudl do nicely right now. Even Iced Green Tea.
 
Well, I prefer coffee, even though I grew up in the south where they drink sweet ice tea. My paternal grandfather came over from Britain where hot tea reigns, but I didn't inherit a love of it. I can drink tea, but I wouldn't make it for myself.
