It could be that she noticed Nick's hesitation in setting Karen straight, and telling her that she has no chance with him. Then Karen stated that she kissed him and realized he is her love. With these two facts, she probably feels that since she had no one in her corner when she was following her heart, she could at least be there for her daughter.
Personally, I think it is completely selfish of her, considering she doesn't even take in Nick's daughter or his wife. They're just collateral damage as long as her daughter gets what she wants. On another note, though, at least my worries are put to rest that Nick is actually a Darling by birth (or Karen is a George by birth), because I would hope Letitia wouldn't push her daughter into an incestuous relationship.
