I find the idea appalling too, but I don't think the practice is any different than our practice of boiling and consumers lobsters.

I am so glad I have a strong stomach for this kind of material or those videos (the second one was even more disturbing) would have made me very ill!
It's insanity! Have you seen the fur farm video ("courtesy" of PETA) that shows various animals (cats/dogs/raccoons/etc.) being skinned alive while they blink, bark and writhe around? That trumps this fish video by a mile. I was severely disturbed.
Both videos show butchering on the upper belly. This indicates evisceration to me. Though I'm unsure, I suspect there isn't a beating heart. Perhaps the guts have indeed been left intact? Chinese chefs?
All I know is if it is blinking, I'm not eating it!
