If you have never put a thick slice of Asiago cheese on hot apple pie - you don't know what you're missing. !!
 
Living in S. Arizona it's easy to acquire a taste for spicy, so I slip some pickled jalapeno slices in the sandwich and find it appealing.

A tip too, is if you don't have enough butter to coat the outside of the bread is to substitute mayonnaise, it really tastes good and you barely can distinguish the difference (a local chef taught me that).

Because in a cheese sandwich the cheese is supposed to be the main event. If meat gets involved it's no longer a cheese sandwich, it's just a sandwich. The meat will always usurp the spotlight.
 
Grilled ham &cheese is good too.
If you want the cheese to "stand out", use a mild ham and a sharp, strong cheese. Ham & cheese is one of the more popular sandwiches, there's no reason it can't be grilled to enhance the flavors.

My mother and sister make this AWESOME tahini cheese (Vegan cheese) that has pimento in it and ACTUALLY MELTS!!! It makes the BEST grilled cheese I've EVER had!!! ..|

They gave me the recipe -- but it takes a WHOLE day just to make a batch... :(

Oh well...

Now I'm HUNGRY...

I'm asking this because I've bought from health stores in the past and the cheese was bland...

On the other hand -- my mothers tahini cheese is INCREDIBLE!!!

Basic Purist is:

Garlic Butter

SF Sour dough

Sharp and Monterrey Jack

Pan and stove.

Purist Gourmet is:

Add jalapenos\tomatoes or both...

Anything else smacks of Carls Jr.s or Wendys.

(not bad, just knock offs...like off-broadway so to speak.)

I don't know what homemade cheese taste like. Try it and let me know what you think. I have had the mozzarella for pizza before. And it is the best tasting and texture vegan cheese that I have ever had.

If you like vegan cheese, raw vegan cheese made from nuts has the same fatty, creamy mouthfeel as a soft milk cheese -- and if you age it, you can get some of the same fermented cheese flavor.

If you, like me, are an unevolved omnivore -- the George Foreman grill has done more for my grilled cheese making life than any invention since sliced bread. Everything gets melted evenly and you don't have to keep flipping things in the pan.

(I love apples and cheese, and will have to try a cheddar and tart green apple combo. My favorite dessert is apple pie with a slice of cheese melting over it. Has to be a slice, shredded doesn't cover properly.)
